Once inside a wall cavity, smoke particles settle on the studs, the back side of drywall, insulation, and any wiring or ductwork running through that space. Wiping down the visible drywall face only addresses the outer layer. The odor source can be sitting inches away, sealed behind paint and material that was never touched.

How odor at the source is actually addressed
Dealing with smoke odor at its source generally means getting to the material that's holding it, not just the room around it. Depending on the type of fire (fast-flame versus smoldering), the type of material involved, and how deep the smoke traveled, that can mean thermal fogging, sealing and encapsulating affected framing, cleaning or replacing insulation, or in more severe cases opening the wall to remove and replace material outright. Air alone, even with strong deodorizers, does not resolve odor that's embedded in porous material. This is also why odor can seem resistant to consumer-grade fixes: those methods treat the air in the room, not the studs and insulation behind the drywall.
